Kisi – White Dry

Traditional Georgian white wine made from Kisi grape variety cultivated in Telavi district, Kakheti, Eastern Georgia.  The color of the wine is golden straw. It offers a bright varietal aroma with floral tones, wonderful bouquet of ripe fruits and a mild, sophisticated taste. The wine goes well with hard cheese, meat and seafood.

Vinification

Selected grapes are picked at 18-22% of sugariness and 8 of titratable acidity. After removing the stems and de-pressing, the clear juice is moved to the cleansing reservoir and kept there for 15-18 hours. Then the clear juice is removed from the sediment and moved to fermentation reservoirs. The fermentation proceeds at a low temperature of 12-15°C.
