  Traditional Georgian PDO wine made from Tsolikouri grape variety cultivated in the strictly regulated micro-zone of Tvishi, Lechkhumi district, Racha-Lechkhumi region, Western Georgia.  Wine is light straw yellow in color. It offers a bright, fresh varietal aroma with notes of white flowers and citruses. The taste is fresh and well balanced with a wonderful fruit bouquet.

Wine Composition: 100% Tsolikauri

Alcohol: 11%

Taste: Sweet with notes of acidity. Has fruit aromas with notes of white flowers. 

Serving temperature: 10-12⁰C

Vinification

Selected grapes are picked at 22-24% of sugariness and 8 of titratable acidity. After removing the stems and de-pressing, the clear juice is moved to the cleansing reservoir and kept there for 15-18 hours. Then the clear juice is removed from the sediment and moved to fermentation reservoirs. The fermentation proceeds at a low temperature of 12-15°C. As soon as the sugar level goes to 7-5%, the wine gets cooled to stop the fermentation and after filtration gets stored at -2°C
